Our Culinary Mushrooms

Grown in two Farm Box containers in our outdoor garden space, JFS Altius Farms will grow more than 400-600 pounds of mushrooms per week, year-round. Blue Oyster Mushroom

Named for its blue/grey color and subtle oyster flavor, funnel shaped cap.
Lions Mane Mushroom

Large, white, shaggy. Contains bioactive substances that benefit the body – heart, gut, and brain.
King Trumpet Mushroom

Firm, meaty texture. Nutty, earthy, woody umami flavor.
Chestnut Mushroom

Tan and brown capped mushrooms that grow in clusters, related to white and cremini.
Enoki Mushroom

Tall, white, gilled mushrooms with slender stems and small rounded caps. Mild, slightly fruity flavor and crisp texture.
Pioppino Mushroom

Grown in abundant clusters, these nutty mushrooms have a peppery taste. They have a floral smell and crunchy texture.
